May 3

Last day of cooking class before our final! Bittersweet as the chocolate we sprinkled on our cannoli this morning. We had Wednesday classes today to make up for our day off for Labor Day. We had to prepare a traditional Italian dish and put a "twist" on it. My group decided to take a stab at cannoli and twist the traditional recipe by using espresso in lieu of wine. We ran to the market to pick up some fresh ricotta for the recipe, too. It was fun rolling the cannoli dough and frying them in special cannoli shapers. Next week, we have our practical final: we will make a dish and present it to a panel for judging! Someone call Padma and Tom, we have an episode of Top Chef on our hands.
